William Blue Dining Now Open for 2010
William Blue Dining is now open for business with a delicious new menu, featuring exciting Australian ingredients and showcasing the culinary skills of William Blue students.
Chef James Ballingall, Director of the Culinary Arts Program at William Blue College of Hospitality Management, has unveiled the brand new menu for William Blue Dining, the College's award winning student training restaurant.
"The new menu is a contemporary overhaul of longstanding classics. With a nod to such exotic new trends as molecular gastronomy, curing and cold smoking, the menu builds contrasting flavours that border on combative," explains Ballingall.
The entirely new menu has been devised to challenge the diner's perception of cuisine and is inspired by traditional regional french cuisine combined with contemporary Australian ingredients. The new menu is broader and now offers the diner a choice of five different courses to experience, alllowing William Blue Culinary Arts students the opportunity to showcase their skills.
After listening to feedback from regular guests of William Blue Dining, the restaurant has responded to demand and will be open for Lunch and Dinner Service, Monday to Friday from February 22nd, 2010. The extended trading hours will provide William Blue students with extremely valuable industry experience, allowing them to make the transition to the workplace more easily, says Ballingall. "William Blue is the only College in Australia to deliver 50% of its practical curriculum in a live working restaurant."
After being awarded the 'Best Restaurant in a Training Institution' award by the NSW Restaurant and Caterers Association in 2008, William Blue Dining must surely be the best value fine dining restaurant on the Lower North Shore. With 3 courses for $29.00 and 4 courses for $35 it is no wonder that bookings are already pouring in - many services have already sold out.
