This term, the Menu Engineering & Design class were fortunate to have guest speaker Jean-Michel Raynaud, a multi-award winning French pastry chef and owner of the renowned La Renaissance patisserie at The Rocks. Jean- Michel is a member of ‘Relais Desserts’ – the world’s most exclusive French Patisserie association. Relais Desserts is the patisserie equivalent of receiving Michelin Stars.
Jean-Michel provided a synopsis of his journey and his subsequent success. He also holds three world Kickboxing championship titles and an MBA from Harvard University. More recently, he wrote The French Baker, a culmination of a 30-year career. The students were captivated by his story, which included the highs and the lows of his career.
He is passionate and dedicated to his chosen craft, he explains, one of the most exciting things, as a professional is to understand, educate and cater for the dynamic and ever-changing market. This includes awareness of popular flavours and styles that come in and out of fashion. This is what makes his job so exciting and never boring.
